I would like that coh3 would be like this:
1) vcoh gameplay
2) True sight
3) improved UI like has coh2
4) ability to overpass obastacle (like coh2)
5) chat system like coh1
But srsly just putting vcoh gameplay would make it a must have

Considering TrueSight was in CoH1, just disabled for the performance issues we experience today with CoH2, the only difference is fence vaulting.
And vaulting in this game is pretty simplistic anyway.

This is a hard one, since the war obviously only had a limited number of things occur and can't be added too, so who knows =(
Technical stuff / Engine
Being able to zoom out more and scroll better. Supreme Commander set the standard of how every RTS should handle zoom and map scrolling along time ago.
Please for gods sake no micro transactions.

I just expect upgrades for infantry with fuel/tech investment like in coh1. Coh2 felt so linear to me because of that.

In the mid to late 90s I played a game (which I cant remember the name of) that allowed you to pick from like 50 countries, pick the era and the allowable units were based on the era you selected. You could have hypothetical cold war battles (US, Brits, Germans vs Soviets, etc), middle east battles between Egypt and Israel, Syria and Israel, etc, Modern battles between say US and China. The developer had done a great job in including the military units from each country. Had a lot of map variety.
For CoH3 Id like to see a setup where content is era specific and created to allow for dlc and campaigns which are made based on historical battles wars. I want diversity because while I love the ww2 era it does get repetitive. Lets be able to play out battles from The Seven Day war, Desert Storm, Afghanistan, etc.
Just my opinion. As I said, I like the ww2 era but it becomes too repetitive.

I hope we actually get a melee mechanic like Dawn of War has. Cause it's sometimes iffy to see Shock Troopers and Volksgrenadiers standing right next to each other firing at close blank range.

Company of Heroes 1 is still the Greatest Strategy Game.
My Wishes for a COH3 are:
No absolutely never DLC Content in Multiplayer
UI like Company of Heroes 1
No Freaky Comic Style Graphics and Bad Faction Design like COH2
No Gardening Skins like COH2
No Steam, this Quazal Server was fine

Permanently BannedI expect that dont be like coh2 starcraft need for speed run in red cover and calling grenades or magic calls for kill a green cover squad (with no problem!). And dont have magic calls without vision like brits can doo.
Most important: less capture points on map, focus on fight, less take point game (boring).

I just hope they keep battle servers coh3 instead of peer to peer connections for smooth gameplay. That was always something I hated from coh 1

For starters, i would still play coh1 if they didnt butcher it when they lost original servers.
Relic did phenomenally BAD job at recoverig servers for coh1, and coh lost almost every function to properly play multiplayer. Very bare bones. Just another thing that relic half-assed.
If coh1 was left as is, it would probably had bigger playerbase today than coh2.
Keeping in mind that coh2 was free to get multiple times, to keep the playerbase healthy.
