Which doctrines to choose

I need a bit of advice with this, sometimes I'm not quite sure which doctrines to use. In 1v1 I generally go with scavenge, breakthrough and fortifications though never feel like I make full use of them and usually just use them for a couple of abilities like mg34, infiltration grenades etc. Sometimes I even think I choose the wrong doctrine which ends up costing me the game, or I rely on the doctrine too much i.e. too many flame sturmpios or too many falls/JLIs etc. Any advice?

As a general rule you shouldn't rely too much on your doctrine, instead use it to complement your main army. That's why it is often better to wait and see what your opponent does both strategy wise and doctrine wise and pick a doctrine that will best suit you to deal with them.
On the other hand picking a doctrine early can be quite beneficial if you need something fast such as call in infantry to help you engage better. For example popping out jaegers to help you flank a position etc.

Scavenge is the only OKW doctrine I think should always be in your loadout. All the abilities here are useful.
Luftwaffe just never works for me. Fallschirmjagers always look like this great option, but they bleed like crazy and get wiped a lot.
Breakthrough is extremely good (probably the best) if you're playing 4v4 or something. I've found a few uses for the Jagdtiger in 1v1 but they're generally few and far between. Only other good ability here is Panzerfusiliers - which is a very good ability, mind you.
I'm not a big fan of Spec Ops but the Command Panther is decent if you're playing some sort of extended Med/Mech build and need heavy armour. Otherwise meh - and I'm unconvinced that infrared StGs are really that great.
Can't comment on the other doctrines.

I think the 'which doctrines' question is hard to answer for OKW, it kinda depends on what matchups/maps you find difficult to play. That said, Scavenge is pretty much mandatory because it's so good. Luft is solid even though I personally dislike it. Breakthrough is really good if you want a line infantry unit with better AI than Volks. Feuersturm could be a niche pick if you struggle on urban maps. Finally, Spec Ops is good if you like the T3 -> Luchs -> T2 for healing -> Command Panther strategy, which is pretty meta at the moment.
I'd say those are the doctrines worth looking it. Personally, I don't think much of Fortifications because if you need MGs you could just go Luftwaffe instead and I don't find that the Pak emplacement is very useful. YMMV though.

IMO, You always need Spec Ops as OKW... Look what Noggano is doing, he like to go Spec Ops to get that C.Panther and maybe get a Stuka instead of that costly T4. I go for Luftwaffe,Scavenge and Spec Ops which pretty much covers everything that can come in your way in the match..

+1 On Scavenge being good in most situations. I'm inclined to agree that Luftwaffles is always good to have too (though I have a personal love/hate relationship with it). I mostly have it for the option of MG34s to lock down a map after I have it mostly under control or if my opponent is being blobby. Luft. is a fine line to walk though I've thrown a few matches because I fell into the "too many Fallshimjeager" trap, but its solid over all.
Third slot is personal preference - Spec Ops is nice because you get grenades and the Command Panther is a nice crutch to have if you lose T4 or don't have the fuel to tech up. I like Feurstorm to have extra flamers on urban maps but its pretty situational. I *want* to like Overwatch but it kinda lacks Oomph for me.

+2 on salvage.
I find okw stockpile muni early game, and once that 105mm barrage is good to go, at 500 muni it makes UKF players cry when they lose 3 emplacements.
If you're rushing early, go for breakthru - panzerfuseliers are rape at vet 5
Also, in team games breakthru operations is fantastic for pushing the enemy back
