Is this purely random or are there certain factors that can increase/decrease the chances? From my experience the highest to the lowest squad chances to drop weapons are as follows:
Tommie (2x weapons)
Riflemen (2x weapons)
Pgrens (2x shrecks)
Sturms (1x shreck)
Grens (1x LMG)
From that (even though its a slight observation (confirmation bias?) and not fact) we can assume that having more of something ups the chance of a drop... But why have I NEVER seen an STG drop from Volks/Obers/Storms?
Brens drop like pinatas even on a 5 man squad, it just seems so... stupid that they drop before the squad is wiped, what gets me even further is that say you have a 4 man squad with 2x weapons, 1 weapon is dropped and you have 1 man left (holding onto that 1 weapon) he can then pick up the dropped weapon... How does this work? Least I'm sure they can unless memory fails me.
Is this ever going to be fixed?

What changes is the time when there will be check if the weapon is dropped or moved to another member.
For instance Pg will not drop a shreck before they go down to 2 members. The check start once there are 2 members.
On the other hand if one equips them with G43 the check will start from the first model.
There are certain weapons that do not drop like PPsh, ST44, Thompson.

Couple of things here, STG's cannot drop, that is their advantage over other squad upgrades. So you will never see them hit the ground.
Otherwise squads have something called slots. Each weapon takes up a certain number of slots and each time a squad falls below the number of members that are required to hold each weapon in a slot the die is rolled. This is why a squad with 1 man can still hold 2 shreks, but why it might drop when the 2 model drops.
Tommie's suffer particularly here because they have scoped rifles at vet 3. These scoped rifles are a bit of a problem because they are carried by the squad act a bit like a slotted weapon (ask a modder for specific details). When the tommie squad falls below 4 members (which is like every fight) they have a chance to drop a weapon. This is very similar to the problem Guards used to have (Guards hold 4 weapons so they could drop all the time), but this was changed by lowering their specific drop rate.
Rifles are pretty unlikely to drop weapons, but they usually carry 2 so you may notice it. PG's, Sturms and Grens are small squads and so can drop weapons more often than larger squads because loss of models means more chances to drop. Grens and Sturms are actually extremely rare since the whole squad needs to die, and even then it is only a percent chance, not a guarantee.
Edit: Comment above is correct, forget about G43 upgrades. PG's with G43's and shreks can drop a shrek each time a model dies, so they will be more like pinatas than fighting units.

-Guards are the#1PK #1 Squad weapon dropper. They are the only squad with 4 weapons slots, double DPs and PTRS. Once they get to 4 models, they have chance to drop weapon upon each model death.
4-Tommies have a particular issue in comparison to other 4/5 model squads which can get access to double weaponry. Once they hit vet 3, they get access to 2 scoped Lee enfields which count as "passive" weapons upgrades. What should happens is that this Scope rifle shouldn't had priority over other weapons unless base Lee enfield. (Or just simple remove this).

Vet 3 Tommos and DP Guard Squads all have 4 weapons, so they can start dropping guns the moment they drop below four guys. Guards have a lower drop chance to compensate.
