I would only show live streams for COH2 and filter out any other games

I agree, this way the user is in charge of what they want to see. User options is always good to have. My 2 cents.

maybe little buttons quick buttons (alternatively use click on the text and show a little down arrow or up arrow) above each category allowing you to filter by population, games, Alphabetical order.

alphabetical order: first click A-Z second option Z-A
Game: first click coh series first second click other games first
Population first click highest to lowest second click lowest to highest

also and interesting concept would be allowing users to favorite the stream so they show up first always on the list no matter how you filter them, maybe even filter by most faved to. adding another way to sort.

default would be by population ofc. as it waas earlier and for most of its life time.
